A modder at Nexus One Hacks has managed to get Ubuntu up and running on the N1 without even pulling off the Android OS. While it may be difficult to get all your apps to play nicely with Linux (like usual), it's still cool to be able to say your phone dual boots, right? Want to give it a go?
